One of the most difficult parts of the day for me is deciding what to feed Page for breakfast.  Like any child, she’s opinionated about what she’ll eat, but she seems to be more obstinate in her choices during breakfast.  She doesn’t eat what I imagine most kids do in the morning, no breakfast cereals, or breakfast bars.  She is more into things that take more time, like eggs, bacon, quesadillas! She loves a hot meal to start her day off, so this week when I went shopping, I thought I’d switch things up a bit and make some homemade breakfast sausage for her.  I’m using ground chicken for this recipe, but feel free to use pork, if you’re so inclined.  The fresh herbs in this recipe are what make these sausages amazing! What’s more amazing is that you don’t need to grind the meat yourself.  Order a pound or two of ground chicken from your  meat guy/gal add some fresh herbs and BAM–Jimmy Dean style sausages for you and your loved ones.  These would be perfect for Sunday Brunch, or for your Mother’s day breakfast–point your husbands right to this site.  One pound of ground chicken made about 12 sausage patties.  I put 5 in the refrigerator, and froze the rest for later use.  If you don’t plan on cooking these within 5 days of making them, then I suggest you freeze them right away.

Prep time: 10 minutes

Cook time: 8 minutes

 

Ingredients:

1 lb of Organic air chilled ground chicken (dark meat)

2 tablespoon of fresh sage (finely chopped)

2 tablespoons of fresh thyme (finely chopped)

1 teaspoon of fresh rosemary (finely chopped)

1 tablespoon of maple sugar (can substitute with maple syrup or brown sugar) Omit if you’re on Whole 30

1 teaspoon of sea salt

1 teaspoon of red pepper flakes (more if you want)

 

Directions:  Add the ground chicken and spices to a medium sized bowl,

Form patties, and either refrigerate for up to 1 week, or freeze in an air tight container for up to 3 months.

 

When ready to cook, spray a cast iron skillet with coconut oil, bring pan to temperature, then add patties, cook for 3-4 minutes on each side,

or until golden brown, and meat is cooked through in the center.

Remove from pan, serve and enjoy!!!

My daughter loves tofu–loves it!  Lately she has been refusing to eat breakfast, I think mainly because she tires of having the same thing over and over.  One of my favorite natural restaurant’s serves a tofu scramble which I adore.  I thought I’d give it a try in my own kitchen, in hopes that my daughter would enjoy it–she did.  She actually thought this was a real egg scramble–she kept saying “mmmm egg’s are good for you?” This is equivalent to her seal of approval.  So everyone is happy when I make this;-) Mommy win!!

Prep time: 5 minutes

Cook time: 10 minutes

Total time: 15 minutes

Ingredients:

7 ounces of soft tofu

1/4 teaspoon ground tumeric

1/2 cup of diced onion

1/2 cup of diced red or green bell pepper

sea salt and black pepper to taste

1 tablespoon of olive oil

Directions: Heat oil in a skillet, add bell pepper and red onion and saute until the onion is translucent, about 4 minutes, add in the tumeric and cook for 20-30 seconds:

Add in the tofu and break up with a fork, mix until the tumeric, onions and bell pepper have been well incorporated into the tofu, and the tofu has been warmed-about 3-4 minutes.

Transfer to a serving bowl and enjoy.

Gluten-free guiltless almond flour banana nut muffins

If your house is anything like my household, mornings are hectic!!  Breakfast is always a chore to make! Certified Nutritionist Justice De la Torre comes to the rescue with this protein packed, gluten and grain free muffin. This muffin is moist, and quite frankly, the best muffin I’ve tasted in quite some time! Trust me when I say that you want to make this muffin! In addition to being delicious, this muffin is good for you.  It’s high in fiber, iron, potassium, and Vitamin E! With the addition of 1 scoop of protein powder, each muffin has 5 grams of protein. If I were you I would make a double batch of these, because they are just that good. This recipe uses Almond flour, also known as almond meal. You can find almond meal in the flour section of almost any supermarket now days. This is a great muffin to start the day with. But, it’s also great as a high protein snack for those middle of the day cravings. My daughter loved this muffin, as I’m sure will you too!. This is a great alternative to  sugar laden banana breads, this muffin contains no refined sugar!

Here’s what you need:

cups  almond flour/meal
tsp  baking soda
1/2 tsp  sea salt
1/2 tsp  baking powder
½ tsp cinnamon
3  eggs
2 1/2  very ripe bananas, mashed
1/2 cup maple syrup or xylitol
1/4 cup melted coconut oil
tsp  vanilla extract
1/4 cup chopped nuts
Equipment:
Muffin pan
Preheat oven to 350F. Grease or line a 12muffin tin. Mix dry ingredients in a large bowl.

In a separate bowl, mash bananas with a fork, add in your wet ingredients, and mix well:

Add wet mixture to dry mixture. Stir just to combine.

Fill muffin cups. Sprinkle with chopped nuts.

Bake about 20 min. (tops will be set and spring back when lightly touched)
