So everyone has that one friend whom they idolize, you know the one who is super intelligent, charismatic, gorgeous, and the kind of mother to her children you only wish you could be. Well that person for me is my friend Jennifer. She has the energy of the energizer bunny–actually I think she could out last that bunny 3 times over, She’s a great friend, reliable without fault, and on top of all that, she is a great cook. One of her signature dishes is basil Chicken.  It’s beyond delicious, the sweet notes of basil mixed with the Unami flavors imparted by the soy sauce in this dish make it heaven on a plate.  She makes hers with the whole parts of chicken, usually legs, or drummetts. I decided to try it using ground chicken, because who couldn’t use another way to use ground meat?  I’m so glad I did, it is equally as delicious as using chicken with bones, but much less time consuming, because there aren’t any bones.

Prep time: 5-7 minutes

Cook time : 15 minutes

Total time: 20 minutes

Ingredients:

1 pound of ground chicken

3/4 cups of fresh basil chopped

1 small brown onion or shallot chopped

2 tablespoons of soy sauce

2 large cloves of garlic

2 tablespoons of olive oil/ghee

1/2 teaspoon of red pepper flakes

sea salt to taste

Directions: heat oil in skillet, add garlic, sauté for 30 seconds, then add the onion, and cook until translucent. Add the ground chicken and brown. Add in the soy sauce, basil and red pepper flakes, cook for 2 minutes then turn off the fire. Serve over brown rice, or in lettuce cups.

One of my favorite things to do is reinvent a dinner out of something we ate the night before. Let’s face it, leftovers are nice, but a freshly made dinner is better. While buying a whole chicken works out great for our budget, we are always left with leftover chicken. This recipe is result of me and more importantly my husband not wanting to eat the same roast chicken I served the night before. It’s super simple to make, and very delicious.

Prep time: 10 minutes
Cook time 10 minutes
Total time: 20 minutes

Ingredients:
2.5 cups of Pre cooked chopped chicken
2 small cloves of garlic
1 tablespoon of cumin
1/2 teaspoon smoked paprika
1/2 teaspoon of garlic powder
1/2 cup of diced onion
2 tablespoons of olive oil
1 tablespoon of freshly chopped cilantro
6 large organic corn taco shells
Sea salt to taste

Directions:
Heat the oil on a cast iron skillet, add the garlic and onion and cook for 3 minutes. Add in the chicken, cumin, garlic powder, paprika, sea salt and toss well. Cook for another 5-7 minutes. Add in the cilantro, remove from heat, and serve inside corn tortillas, with your choice of toppings.

I make roast chicken a lot for my family. Mainly because it’s easy, and I know everyone will enjoy it. However, because I make it so often, I am always trying to come up with ways to make it differently, ways in which I can add flavor, this pesto does exactly that. It adds a ton of flavor, but requires minimal extra work. You throw all the ingredients in the blender or a food processor, push a button and it’s done! Leftover, pesto, if you have any, can be spread on bread as the condiment to leftover chicken salad sandwiches…talk about yum! If you don’t want to roast an entire chicken, you can scale this down and use just 2 chicken breasts, it doesn’t matter. I find that buying a whole organic chicken is often less expensive than buying just 2 organic chicken breasts. So I always prefer to save money and buy the whole chicken. I reinvent the leftover chicken into tacos, salad, soup or tostadas.

Ingredients:
1 whole Organic Nongmo Air-chilled Chicken
2 cloves of garlic
2-3 Tablespoons of Olive oil
1/2 teaspoon of thyme
Sea salt and black pepper to taste

Ingredients for Cilantro Pesto:
2 cups of cilantro
1/2 cup of olive oil
1/2 cup of freshly grated Parmesan cheese
1/4 cup of toasted hazelnuts
Sea salt and black pepper to taste

Directions: Pre-heat the oven to 425F. Season the chicken generously with sea salt and black pepper, then rub it with the garlic and oil. Line a baking dish with foil, place the chicken on it and place it in the oven and cook for 45 minutes or until the chicken is cooked through. Meanwhile, place all the ingredients for the pesto in a blender or processor, and blend until smooth. Serve the pesto however you’d like, I smear it on the chicken, with an additional spoonful or two, so that I can dip as I go. It’s so delicious!!!! If you’ve been following my blog for awhile now, then you know that I’m enamored with Mediterranean spices, and food. One of my favorite things to have when I go out for dinner at a middle eastern restaurant is a naan bread with za’atar spices on it. What’s not to like? Piping hot crispy bread with a tangy spice, and hot olive oil…yum! I’m drooling at just the thought, it’s just so yummy. If you’re not familiar with za’atar you’ve been missing out. It’s simply a mixture of thyme, sesame seeds, marjoram, cumin, and sumac. With the exception of the sumac, you probably have all the ingredients to make it in your cabinet right now. You can’t make this without the sumac though, it’s tart and tangy flavor would be missed. The herbaceous smell of this spice is reason enough to use it. It pairs well with many meats, not just chicken, but on chicken it is amazing. I will share my recipe for my own homemade za’atar spice in a future blog, but for this, a store bought version will do. I got a packaged za’atar spice blend at Whole Foods in the spice aisle. While it’s not as good as my homemade version, it’s very close.

Juice of half a large lemon
1 tablespoon of olive oil
2 cloves of garlic grated
5-6 (1lb) boneless skinless chicken thighs
Sea salt and black pepper to taste

Directions: Pre-heat the oven to 425F. Mix the za’atar, lemon juice, garlic, and olive oil together in a medium bowl. Season the chicken with sea salt and black pepper, then toss in the bowl with the marinade and mix well. Line a baking sheet with foil, then add the chicken, and place in the oven, for 15-20 minutes, or until chicken is cooked through. Remove from the oven, serve and enjoy!

Another great way to use my ranch seasoning is on chicken. Ranch seasoning was made to go on chicken. Chicken and ranch make a perfect pair. This recipe is a great one for a quick fix week night meal, or served to some friends at a Super Bowl party. Just substitute the thighs for wings and you’ll have a game day food everyone will be talking about for days to come.

Ingredients
5-6 skinless boneless chicken thighs
2 tablespoons of my ranch seasoning
Sea salt to taste
1 tablespoon of Olive oil

Directions:
Pre heat your oven to 425F. To a bowl add the chicken thighs, olive oil, ranch seasoning and sea salt, and mix well. Place chicken on a foil lined cookie sheet, and bake for 20 minutes, or until chicken is cooked through. Remove from oven, serve and enjoy! This chicken is great with my ranch dip!

My husband gave me a food saver for Christmas. Most women would balk at such a gift, but not me, I’ve wanted a Food Saver for a long while now. Among the many great things that a Food Saver does, like resealing opened bags of chips, and preserving veggies for an indefinite amount of time, is marinating meat in under 15 minutes. Who knew that sucking the air out of something would create such great results. You don’t need a food saver to make this, just marinate your chicken the old fashioned way, 30 minutes in this marinade is great, but longer is always better.

Prep time: 5 minutes
Cook time: 20 minutes

Ingredients
5-6 skinless boneless chicken thighs
1/4 cup of green onions sliced
1 tablespoon of soy sauce
1/4 cup of mandarin juice/ orange juice
1 teaspoon of mandarin or orange zest
3 cloves of garlic grated
1/2 teaspoon of smoked paprika
Juice of 1 small lime
1 tablespoon of cilantro finely chopped
2 tablespoon of olive oil
Sea salt to taste

Directions:
In a medium bowl whisk together all the ingredients for the marinade. Add the chicken, mix well, and refrigerate for at least 30 minutes.

Pre-heat the oven 425F. Line a baking sheet with foil, remove the chicken from the marinade, and place it on the foil lined baking sheet. Cook on 425F for 15-20 minutes, or until chicken is cooked through. Top with cilantro and enjoy!

I love capers, something about their salty brininess speaks to my taste buds. This dish is so simple, and easy to make. All the work is in remembering that you’re cooking it, so that you don’t burn down the house!

Prep time: 5 minutes
Cook time: 25 minutes
Total time: 30 minutes

Ingredients:
1lb of chicken ( I used skinless, boneless thighs, you can use bone in with skin, but just be aware it will extend the cooking time a bit.)
1/3 cups white wine vinegar
1.5 cups of organic chicken broth
1/3 cup of capers drained and rinsed
1/2 cup of fresh parsley
1 medium onion
Sea salt and black pepper to taste

Directions:

  • Heat 2 Tbsp. oil in a large heavy skillet over medium heat. Season the chicken with sea salt and black pepper, then add the chicken and brown on both sides. Add in the  onion; cook, stirring often, until softened. Add the parsley, and capers to skillet; cook for 1 minute. 
     
     
    Stir in broth and vinegar.  Reduce heat to medium-low; cover and simmer until meat is tender and  cooked through falling off the bone, about 20 minutes.
  • Transfer chicken to a large platter. Spoon sauce over chicken; garnish with parsley.

One of my favorite Mexican restaurants serves this super yummy and tangy chicken with paprika and lime. As always I love to try to recreate my favorite restaurant meals in my own kitchen. Let’s face it, it’s not always convenient to eat out, especially with a toddler who doesn’t like to sit for an hour with her hands in her lap. This chicken dish can be made with just parts of the chicken, you don’t have to use a whole chicken. I used two kinds of paprika, but if you only have one kind use that.

Prep Time: 5 minutes
Cook Time: 45 minutes
Total time: 50 minutes

Ingredients
1 Tablespoon of paprika
1 Tablespoon of smoked paprika
2 large cloves of garlic grated or pasted
Sea salt to taste
Black pepper to taste
The juice of two limes
Handful of cilantro
Two tablespoons of oil

Directions:
In a bowl mix the garlic, paprika and oil into a paste, then rub it into the skin of the chicken. Season the chicken generously with salt and pepper. Place on a baking sheet and bake at 425F degrees for 45 minutes to an hour until the bird is cooked through. Remove bird from the oven, pour on the lime juice and sprinkle with cilantro. Serve and enjoy! It’s tangy with a kick from the smoked paprika!

Roasted chicken is universal. Almost every culture has some version of roasted chicken in their culinary history. However, as universal as roast chicken is, many still have a hard time making it. Just yesterday someone I follow posted a before and after picture of a roast chicken on Instagram. The bird was pasty before it went in the oven, and the bird was still pasty after it came out of the oven. I felt bad for this Instagramer because I’ve been there. The truth is that roasting a bird perfectly begins with steps that are made long before the bird goes in the oven. If you master these steps, I guarantee you that your roast chickens will come out of the oven, perfectly marinated, juicy and with a skin that is crackling and golden brown.

Step 1. Pick the right chicken! Organic, non GMO, and air chilled is the way to go! Why? Because conventional chickens are stored in salt water to plump them up before you buy them. A water logged chicken can taste good, but it will likely be harder to get a crispy crust on a water logged chicken, than one that is not water logged. Note: Read the label on the chicken, most chickens in the supermarket have  up to 4% retained water because they are dropped in a 34 degree chlorinated water bath before they are sold. Air chilled chickens are not exposed to water, so getting a crisp skin on an air chilled chicken is easier.

Step 2.  Brining! Most of you are probably thinking, “but you just said not to buy a water logged chicken, now you’re telling me to brine it?!” I said it, and I meant it!  There are other ways to brine without water.
Salt brining. This will change your life! Salt brining literally is what it sounds like, you thoroughly salt the chicken, put it in a Zip-Loc and let it sit over night. Salt does two things, it retains moisture and it pulls out moisture. This is a wonderful thing for a small bird like a chicken, because it doesn’t take longer than an hour to cook, so the amount of moisture it looses because of the salt brine is not significant enough for it to dry out. But it pulls out just enough moisture on the surface of the bird to make the skin crisp. At the same time it breaks down the protein, which means moist, tender, and well seasoned chicken!

Step 3. The skin needs to be rubbed with oil, not butter. Although butter tastes great, it contains 16-18% water and 80% fat. Water is an enemy to getting perfectly crispy skin on a roast chicken. If you want to use butter to flavor your chicken, then by all means do so. Just make sure to put the butter where it will do the most good..under the skin in the breast bone. If you want crisp brown skin, use oil, it does not contain water, it is 100% fat, so it will result in a chicken that is so beautifully brown, you may not want to cut it…note I said may not, after you get a whiff of the this delicious chicken all bets are off.

Step 4. Bake on a high temperature from the start. Most people reverse bake roast chickens, meaning they bake at a lower temperature for a longer period of time so the chicken doesn’t dry out, and then blast it at the end on a higher temp in hopes of browning the skin.  Seems plausible enough but results are often not consistent. Take my advice, bake your chicken on 450 degrees farenheight for 45 minutes to 1 hour, your chicken will come out perfect every time.

Recipe for brine
1.5 tablespoons of Sea salt or kosher salt for every 1 pound bird.

Sprinkle the salt all over the bird, place in a large bag and let sit over night. When your ready to cook it, add the oil and any herb you want–rub with a little garlic, bake it for 45 minutes to one hour, and Wah-La perfectly roasted chicken!
